Amabuki Himmelswind is an aromatic Daiginjo of the highest quality. This sake is brewed with a yeast strain cultivated from Abelia blossoms, which unsurprisingly imparts an enamouring florality. In conjunction with a creamy texture, this proves for a greatly harmonious Sake with a rather diverse aromatic profile. Showing notes of fennel blossom, lilies, and chervil, and rounded out by an unmistakably melon-driven fruit character. Highly expressive on the palate and punctuated by delicious lactic tones, ensuring a clean, dry finish.
