The Hatsumago Brewery from Sakata (Yamagata Prefecture) on the coast of the Sea of Japan brews very complex and powerful Honjozo-style sake using the traditional kimoto method which beautifully harmonises and complements this diverse and powerful dish. During the long winter in this region, the warmed sake with its slightly spicy aromas and creamy taste is a very good companion to this dish, keeping the umami notes of the foie gras in perfect balance with the mild acidity and cleansing the palate with a dry finish.
