The Korean tradition of "Anju" dictates that certain alcoholic drinks should be excellently "paired" with a specific food. Since we had the association of high-quality soju, this pairing came to mind, which is based on the Korean BBQ classic "Samgyeopsal". Due to the higher quality of the sake, a simple grilled pork belly would not be an equal, so we made it more complex. The plate is meant to represent a deconstructed "ssam" wrap. In this case, the fresh taste and the subtle acidity of the sake complement the fatty and savoury dish.

Fresh and elegant Junmai Ginjo sake with a hint of muscat aroma. Brewed with the sake yeast "No.12", which was discovered in Urakasumi's sake mash in 1960's.
