The brewery is located in the Fushimi District, whose clear, soft spring water is responsible for the particularly silky texture of this sake. Its pronounced umami note is the starting point for the pairing. The salty nuances of the foamed seaweed butter and the lacquered BBQ eel are perfectly integrated by the sake's umami. The nutty, tart notes in the sake are picked up by the roasted cauliflower and macadamia nut. The sake and the dish get their freshness from the fruit of the nashi pear and the fine acid nuances of the salt lemon. The complexity of the sake and the dish complement each other superbly and the different nuances echo for a long time. There is also the exciting mouthfeel of the crispy scales, which contrast with the tender and glassy fish flesh.

Fresh and elegant Junmai Ginjo sake with a hint of muscat aroma. Brewed with the sake yeast "No.12", which was discovered in Urakasumi's sake mash in 1960's.
