This sake delights with its freshness and beautiful citrus aroma. The dish plays with acidity (caper sauce, pickled elderberry capers, marinated salad) as well as sweetness (elderberry capers, caper sauce) and, as a "counterbalance", a mayo as a creamy textural component. The slight residual sweetness of the sake harmonises wonderfully with the very dominant caper sauce, which on the one hand supports the sweetness of the sauce very well, but also integrates the acidity of the sauce very well. The lemony-fresh, muscatel grape flavour again harmonises very well with the freshness of this lightly marinated, crunchy lettuce heart and the pickled elderberry capers. Last but not least, the lively, fresh acidity of the Dassai 45 loosens up the greasy, creamy mayo.
