The Rihaku Caro Pink Junmai Ginjō blends perfectly with the creamy and soft consistency of the dish. A pleasantly melting and soft mouthfeel is created. The earthy and slightly sweet notes of the black garlic puree are complemented by the floral rose and dark berry aromas, creating an elegant counterpoint. The strong umami component of the shallot cream combines with the umami spice in the sake while the alcohol in the sake is absorbed by the fat in the eel itself and the sesame mayonnaise. The dashi broth from the smoked eel adds a strong smoky flavour that gives the dish an extra dimension and combines again with the umami components in the sake and the earthy-sweet note of the black garlic. In the overall picture, a dish with a rustic, creamy character and dark earthy notes is loosened up and complemented with the fruit aroma of the sake.
