Although the Dewazakura brewery is not located directly on the coast, the distinct fruity exotic flavours of the ginjō go very well with a dish prepared from fresh ingredients and seafood, where the delicate taste of the scallops and prawns is accentuated by the sake. The sake harmonises the taste of the various fresh ingredients and emphasises the umami notes of the sturgeon caviar. The light green tones and aniseed flavours of the sake complement the freshness of the dish, which, with slightly chilled ginjō-sake, brings refreshment to hot summer days in Tendō City (where the ginjō style was established in the 1980s).

This sake led the Ginjo boom in the 90s and represents the Ginjo style from Yamagata: highly aromatic and dry. Floral bouquet and fine, light umami.
