I chose this pairing because the dish and the sake complement each other very well. With the main component, it was immediately clear to me that I was going to have lamb. This tender and mild meat would not dominate the elegant Amabuki Rhododendron too much. The chestnuts came into play so that there is a slightly nutty, buttery component on the plate, which is incredibly good for the sake. The cranberry brings acidity and fruitiness to the dish and forms a round harmonious taste experience. The parsley root chips add an earthiness to the mouthfeel that is very beneficial to the sake.
